Easy Choc-berry Cupcakes with chocolate frosting

The perfect and EASY cupcake for a party or afternoon tea with friends...These choc-berry cupcakes aren't fancy, there's no piping, but they're simple and delicious.  I couldn't decide on whether to make chocolate or strawberry flavoured cupcakes, so I mixed the two, and voila, Choc-berry cupcakes were born.  These cupcakes are topped with a rich chocolate frosting, decorated with chocolate and pink sprinkles and a glace cherry on top.   I'm including my favourite chocolate frosting recipe again...extremely easy, especially if your find regular buttercream splits and separates on you....this frosting always works!!!

Recipe makes 12 large cupcakes

Cupcake batter
175g butter
3 cups self raising flour
1/2 teaspoon salt
1 3/4 cup caster sugar
2 eggs
1/4 cup sour cream
1 1/2 teaspoons vanilla extract
1 1/4 cup of milk
2 tablespoons dutch cocoa
1/2 cup dark chocolate chips
2 tablespoons strawberry essence
2 tablespoons strawberry flavoured milk additive
pink and chocolate sprinkles
glace cherries (optional)

With electric beaters, cream butter and sugar until white and fluffy.  Add eggs a small amount at a time, beating well after each addition.  Beat in vanilla and sour cream, mix well.  Sift flour, add to mixture.  With the beater running, add milk.  Beat on high for 1 minute.  Take half of the batter and put into another bowl.  In one bowl, add sifted cocoa powder and chocolate chips, mix well.  You may need to add a little more milk to get it to a dropping consistency.  In the other bowl, add strawberry flavourings and mix well.    Line muffin tray with large cupcake papers.  Fill each cupcake patty pan with chocolate batter to 1/4 way, then top with another 1/4 of strawberry batter.  Using a skewer of fork, swirl the two batters together 3 times.  Bake at 180C for 20-25 minutes.  Remove from oven and take muffins out of muffin tin, allow to cool on racks thoroughly before icing.

 

Chocolate Frosting (adapted from Nigella Lawson Old Fashioned Chocolate cake recipe)
200g quality milk cooking chocolate
80g butter
1 large tablespoon golden syrup
125g sour cream
1 tablespoon dutch cocoa
300g sifted icing sugar
Melt butter and chocolate in the microwave on medium heat, stir to mix together.  Add golden syrup and icing sugar, and beat well with a whisk.  The mixture should have cooled enough to add the cocoa and sour cream.  Keep beating until thickish in texture.

Spread frosting on top of each cupcake thickly, ensuring that the frosting reaches the edges of the patty pans.  Dip half of the cup cake in chocolate sprinkles, then the other in pink.  Top with a glace cherry.

    I made these cupcakes for a bunch of girlfriends and they loved it!
    One problem though, the iceing sortof melted when I made it, but that was sorted out.
