Easy cherry sponge pudding recipe

This recipe for Easy cherry sponge pudding is a family favourite that is very versatile and very delicious.  This is an easy recipe for a baked fruit sponge, use fresh or tinned fruit with this super light fluffy sponge cake.  Serve hot or warm with a dusting of icing sugar, a little cream or ice cream.

Frugal tip: use any left overs or any frozen left over fruits and make a budget fruit mix.

Recipe serves 6
Sponge batter

50g butter
1 1/4 cups self raising flour
pinch of salt
1/4 cup sugar
1 egg
1/2 teaspoon cream of tartar
1/4 cup ofmilk
1/4 teaspoon rum essence or 1 tablespoon rum or brandy


1  1/2 cups of:
Tinned pears, peaches, apricots, apples, plums, pineapple, cherries
Fresh stewed apples, sliced bananas, stewed stoned and halved apricots or peaches

Pre heat oven to 200C.  Grease a ceramic pie dish or large or small ramekins. In a food processor or electric mixers, beat all ingredients except for milk together to form chunky crumbs.  Add enough milk until a smooth batter. Place enough fruit to cover the bottom of your dish.  Pour sponge batter onto fruit, bake in oven for 25 minutes or until cooked and golden on top.  Serve hot or warm, not suitable to freeze.
